Hawaiian Burger – WellFed Weeknights

My absolute favorite cookbook right now is WellFed Weeknights by Melissa Joulwan. I literally have not had a single recipe we did not love and they are all done in 45 mins or less. I gave this as a Christmas present this year to a few family members I love it so much! It gives you step by step instructions to make sure you meal is completed at the same time as well as a ton of little hints “you know what you could do with that”. I want to give Melissa Joulwan a hug because these are so awesome! If you don’t have her book.. buy it!

Last night on the Menu was the Hawaiian Burger. We did oven baked yellow summer squash as our side. Branch out.. try something new. My husband picked this one and I was not too excited about it. Well let me tell you.. I was wrong. This burger is a new favorite!! Here is what it is supposed to look like.
First season and shape your burgers.

1 1/2 lb hamburger

1 tsp salt

1/2 tsp ground black pepper

Depending on your side dish you should pre-heat oven and prep side. As a side dish, she says fresh veggies raw. We did a yellow summer squash in the oven. Brushed with a little coconut oil, seasoned with salt and pepper on 350 degrees for 5 mins – toss 5 more mins. Then done.

Brown your burgers and prep the toppings. There are multiple ways to cook a burger, depending on how much time I have I will either cook mine in skillet or make my husband grill. On the stove – Heat a little EVOO in a skillet over medium heat for 2 minutes. (She says non-stick.. I usually use my cast iron – for everything!!) Add your patties. I cook 4 mins each side and they are slightly pink – add a minute if you don’t want any pink. On the grill – I make sure to pre-heat grill and cook 4 mins on each side for a little pink (medium). Again, add a minute or 2 to get your desired done-ness. (I feel like that is a word..)

The Hawaiian burger:

1 tsp sesame seeds

4 slices nitrate free ham

4 canned pineapple slices – packed in juice

4 scallions

1 avocado

coconut aminos

Heat a large, nonstick skillet over medium-high heat for 2 mins. Add sesame seeds and stir-fry until golden 3-5 mins. Transfer to plate. Add ham and pineapple slices and cook undisturbed for 2 mins then flip and brown other side. While the ham and pineapple cook, slice the scallions and the avocado. To serve layer ham, pineapple and avocado on top then sprinkle with scallions, toasted sesame seeds and finish with coconut aminos.

Here is our finished product. My son ate half of our avocado so we had to split half, usually we would have the avocado piled high. 

The best thing about all of her burgers.. you do not for a single second miss the bun! Enjoy!!

    I’m salivating! 😀 How did the pinapple complement the burger, did you like it or was it mehmeh? Awesome choice tho.
