Whole 30 – Change your life – Loaded Sweet Potato Fries!

 

Holy Moly! We have a new favorite. As simple as this recipe is I cannot believe we didnt come up with it or at least try it earlier!! Sometimes I crave a fat kid meal. Just crush some loaded fries with an ice cold beer leaving me so full and miserable after.. well this one you get the full but not the miserable. It is minimal time and effort and trust me, your husband will love you extra for it. Chris has been working a lot lately and recovering from his surgery he is dead on his feet when he gets home. Usually we talk about our days over dinner and last night he was literally silent. I said.. New Favorite?? and with a mouth full of deliciousness he said, “Er Mah Gahd vese are dewicious”. I have a feeling these will become a new go to in the Richardson household.

I love meals that I can prep, stick in the oven and clean the kitchen while it cooks. This is one of those. It is super easy and your whole family will love it! I literally took 1 picture… we ate it too fast to take picture of our plates. Oops.

Ingredients:

  • 5 slices thick bacon
  • 1/2 tsp garlic powder
  • 1/2 tsp onion power
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1/4 tsp cumin
  • dash of cinnamon
  • 1 tsp chili powder
  •  medium sweet potatoes – cubed
  • 2 tablespoons melted coconut oil
  • 4 eggs
  • 1 large avocado
  • 1 lime
  • Ranch Dressing – of your choice. Some people make their own.

Garnish: Cilantro & Green Onion

Before I get into the recipe I would like to say that I refuse to eat whole 30 ranch dressing. I have tried many different kinds and recipes and I just get too much mayo. I know there are probably some that are fantastic, but I am such a Hidden Valley ranch fan that if I am eating ranch, it will be Hidden Valley. I know, I know it is not “healthy”. I am willing to risk those calories because I dont put more than 1 teaspoon on this and a little goes so far! You use whatever your little heart desires. I follow a lot of people that have their own recipe and ill gladly share theirs with you.

Preheat oven to 425

In a small bowl combine all spices.

Cube sweet potatoes. You can peel first, I leave the skin on. Toss in a large bowl with 2 tablespoons of melted coconut oil – stir to coat. Add spices – stir to coat. Lay out a large cookie sheet lined with parchment paper and spread sweet potatoes evenly.

Put sweet potatoes in oven and set timer for 20 mins.

Meanwhile, in a skillet of choice cook your bacon. Once bacon is done and other ingredients are prepped, you can sip your glass of wine (or beer – SA Cold Snap is in season!) or do dishes and wait for potatoes to finish.

This is where you get to decide how you like your potatoes. I cooked mine for 40 mins, checking every 5 because I like them extra crispy on the outside. Cooking times will vary depending on the size of your cut of course. After the 20 mins check every 5 after. I gently stir with a wooden spoon just to be sure the bottoms are not burning.

As soon as I took the potatoes out I had my pan hot and cooked my eggs. Using a little of the liquid gold bacon grease I fried those babies up – over medium. We love the ooey yolk goodness and it helps create a sauce!

While the eggs are cooking place your sweet potatoes in a pile on a plate or bowl then top with a little chopped bacon. Lay egg on top then start piling your garnishes. Mine was layered: sweet potato, bacon, egg, avocado (sliced) cilantro, green onion, lime squeeze, and ranch dressing to finish. I did not use a lot of ranch. If you do, it will take away from the flavor of everything else.

Side note: I fried some fresh fried jalepenos for Chris. Egg and water wash tossed in arrowroot powder and  almond flour, salt and pepper – fried in the remaining bacon grease.

Hands down one of my favorite things to eat. I would not be surprised if Chris does not ask for this again tonight. Plus the ingredients are so simple it is usually stuff you already have in your kitchen.
