Cabin Fever…. Last minute meal

Don’t get me wrong, I love cold weather, truly!! But this year with the flu taking over and 3053756 different stomach bugs, strep and the billion other sicknesses we are staying home! I just saw yesterday that the mumps are in Norman, OK! (Keeping politics out, I will just say…my child is vaccinated!) Usually we can hit the museums, aquariums etc, but this year we are total home bodies and the cabin fever is real.  Even Walmart, people are still walking around coughing and hacking! If I can tell that youre sick just by looking at you, you should NOT be at Walmart. They will literally shop for you and you can keep your flu to yourself!

I have decided that it is time for us to make friends in NW Arkansas, but there is no way on Earth I am taking my child to the church nursery right now. Nope. Not doing it. Before you roll your eyes and say.. “She is one of those Moms…..” No, my child has a very fragile immune system and cannot handle cold and flu season like your little one. This is why we distance ourselves during the cold months. Today it is supposed to be around 55-60 YAY! Well its rainy, windy and cloudy…. greeeeat! Another day inside. With the weather up and down and so many cold spells I am sick and tired of soups and cold winter meals! I am ready for some spring farmers market and spring veggies! I have been avoiding the groccery store for a week now because I just don;t wanna. It has been “What can I throw together tonight and make it look like a meal…”. I am also saying the same for myself because lets be honest, I havent worn real pants in a while because I am home and not a soul (other than my poor husband and little boy) see me!

This recipe is a Cassy Joy – Fed and Fit original. Sometimes it is plain and simple, other times I throw some other things on top, but everytime it is delicious!

Sweet Potato, Sausage and Kale! Thats it. Top with all kinds of garnishes, cilantro, ranch, cheese, sour cream, avocado.. the list can go on and on.

I bake my sweet potatoes in the microwave because I dont like the skin slimy. Personal preference. Clean sweet potato, wrap them in wet paper towel and microwave for 4 mins each side (Until soft, depends on your potato size)

While potatoes cook, brown ground sausage in skillet. (I usually get Braums or Jimmy Dean Lite because I have Allens (home chain) or Walmart)img_6566

Remove sausage with slotted spoon to strainer and leave grease in the pan. Chop kale and place in hot sausage grease (not more than a tablespoon) Once kale is wilted to your liking remove from pan.

Slice potato down the middle and spread it a little with a fork. Spoon on sausage, kale and top with garnishes. Simple. Easy. Delicious. I garnished with ranch dressing because it is still in my house….. I need to use it up so I can NOT buy more.

** Side note… this goes great with an ice cold Sam Adams – Cold Snap while using a chair in your living room floor because the chairs are holding up your kids fort! Mmm Mmm Mmmmmm!
